For a vegetarian, it can be a challenge to come up with satisfying, filling dinners that are nutritionally sound. Whether you have been a vegetarian for many years and are just looking for new ideas, or if you want to "go vegetarian" a couple of nights a week to boost your fiber and cut down on fats, there will be something in this class for you.
See how quick it is to make your own hummus (and how to adapt this to make other vegetarian spreads). Learn how to make a rich vegetable stock that you can substitute for chicken stock in many conventional recipes. Learn about different types of tofu, as we add some to our stock to make hot and sour soup. We will consider other ways to punch up the protein content in vegetarian dinners, as we make Thai-style peanut noodles.
We will discuss the challenges of vegan baking, and how to make substitutes for such distinctive ingredients as buttermilk. Then we will make coconut-vanilla vegan tapioca pudding and vegan banana nut muffins. Stay after class to enjoy the food you've cooked, or pack some up to take home!
